When Kevin was drafting a business plan in 2012, we put out a survey asking which cheese central Iowans wanted to see in the store. Fresh mozzarella was a clear winner! It made sense because this definitely isn't a cheese we can easily import. It has worked out well for us because mozzarella is a naturally mild cheese, so the grassy flavor of our farm comes through. We use the traditional cultured method for the best flavor.
